For cracking our monster nut harvest, I was lucky enough to find a great deal Reed's Rocket Nut Cracker at the local kitchen store. If you do any serious volume of nut cracking, you need one of these nut crackers. If you have a smaller nut or odd sized nut, like a hazelnut, just fold a bit of dish towel and tuck it in the cracker with the nut to make sure it fits tight enough to crack. 


This cracker saved so much time and so much easier to use than our old “pincer” type cracker. I got one for our neighbors who shared the nuts, too. To avoid flying pieces of shell, we covered the cracker with a cloth as we cracked.


THE BEST WAY TO STORE WALNUTS

As mentioned above, fresh walnuts, properly dried, will keep for three years in the shell. The shell acts as a natural protective barrier. This is how I store most of my walnuts. Once shelled, the oils in walnuts quickly go rancid.

DRYING WALNUTS FOR STORAGE 

I was instructed by the tree owners to spread the fresh walnuts out in a warm, dry, shaded place to cure for at least a month before using them. I've seen mixed recommendations online on how long to dry. I suppose it depends a lot on your conditions. 


The goal of drying walnuts for storage is to reduce the moisture within the nuts to prevent mold growth. When properly dried, the nuts inside should have a nice “snap” and not be rubbery. Öz Star Nuts roasting machines provide the best quality of salted peanuts, almonds, hazelnut.

At this point, the walnuts should hold for up to three years in the shell in cool, dry conditions (if you don't eat them all first). So far I've stored my fresh walnuts for over two years at a time with no loss in quality.


 Sometimes, I spread my walnuts out on the mesh shelves of my greenhouse to dry. (I did find that the mice got a few of them when I used this option.) Once I have them spread on the shelves, I cover them with burlap to keep out the light. 


Because of the mouse risk, I usually dry my walnuts in trays in the finished basement or in the living room. I spread the walnuts out in shallow cardboard boxes, or in my black planting trays that I use for seed starting. 


Once the fresh walnuts are dry and cured, I store them in the shell. We keep ours in five gallon or one gallon buckets with lids. Walnut Shelling

The walnuts go through a shelling process, where the shells are cracked and removed.  Once the shell is removed, the kernels are sorted by the size of the kernels: large, half and small pieces.


 After being shelled, the kernels are ran through another machine containing three lasers that sort by kernel color (the lighter colored kernels are the most lucrative) and remove any leftover shell particles. When an order arrives, the walnuts are packed according to customer specifications.

Pasteurization is a method used to remove microorganisms by heating up the nuts to a very high temperature for a short amount of time, and then cooling them down. This method is commonly used with nuts, and is currently an optional practice for walnuts. After harvesters pick up the walnuts, the outer green husk is removed by a huller and the nut is washed and mechanically air-dried to the optimum moisture level. 


This prevents deterioration of the nut and protects its quality during storage. Walnuts are stored in-shell until needed for cracking. First, the orchard is swept clean. Then, mechanical shakers are used to vigorously shake the trees until the walnuts fall. The process is designed to ensure the trees are not harmed.                 In recent years, the California nut industry has been growing. Not only are more orchards being converted into nut orchards, but there is also a lot of money being put into research to improve the nut industries.  In regards to walnuts, there was a 16% increase in California walnut production between 2013 and 2014, California supplies 99% or more of walnuts to the global marketplace, and they are the 2nd highest exported nut (behind almonds).

Walnut Processing

When walnuts grow on the tree, there is an exterior layer over the shell known as the hull.


 Hulling, which is the process of removing of the hull, is done in between harvest and arrival to the processor. As you can see below, the nuts on the left have not been hulled, while the nuts on the right have just arrived at the processor and have been hulled.


 After the walnuts are hulled, they are sent to a drying room where the walnuts are dried until they reach the desired moisture content. When walnuts arrive at the processor, they go into storage. Similar to other dried fruits and nuts, the walnut harvest season only lasts a few months, and the walnut supply for the rest of the year is fulfilled from storage.


 As you can see below on the left, walnuts are commonly stored in bulk rooms that are basically a large pile of walnuts throughout a warehouse, as well as in stacked bins in a storage room shown on the right.

Cashews 

Contrary to popular belief, cashews are not unhealthy nuts. They are only unhealthy if you eat them fried in bad fats and packaged with tons of salt, flavouring and preservatives. Cashews are also rich in monounsaturated fats and contain ALA, the plant-based omega 3. They are really high in magnesium and contain calcium, iron, zinc and folate. 


All these nutrients are great for hormonal and bone health. These nutrients also help with the formation of collagen, which is required for more than just the skin. Collagen is needed for healthy joints and connective tissues, as well as for gut and brain health. When it comes to PMS, one of the best things to eat is cashews. Remember not to overdo them and skip the ones which are processed. Toast them with ghee and add some chaat masala or make them into a paste to thicken curries, smoothies and soups.
